Ronnie and Stef’s Alabama White Sauce

When Ronnie and I were in NYC this summer, we stumbled upon Blue Smoke restaurant and sat down for a cocktail and wings with Alabama White Sauce wings that actually changed our lives! Since the flavor of these wings have been living rent-free in my head ever since, I decided to give them their much-deserved space on my blog.

Yield — Serves 4-8 depending on how hungry you are!

What you’ll need

Ingredients

  • For the Wings

    • 4 pounds chicken wings , halved at joints, wingtips discarded

    • 2 tbsp baking powder

    • 3/4 tsp salt

    • 1/2 tsp cracker black pepper

    • 1 tsp paprika

    • 1 tsp garlic powder

  • For the Sauce

    • 1 cup plain greek yogurt

    • ¼ cup apple cider vinegar

    • 2 tbsp brown sugar

    • 1 tbsp brown mustard

    • 1 tsp lemon juice

    • 1 tsp prepared horseradish

    • ½ tsp salt

    • ½ tsp black pepper

    • ¼ tsp cayenne pepper

How to Make

  • First, preheat the oven

    • Preheat oven to 425 degrees F.

    • Line a baking sheet with aluminum foil. Spray the rack with non-stick spray.

  • Now, let’s make the Alabama White Sauce

    • Mix all your sauce ingredients in a big bowl.

      • 1 cup plain greek yogurt

      • ¼ cup apple cider vinegar

      • 2 tbsp brown sugar

      • 1 tbsp brown mustard

      • 1 tsp lemon juice

      • 1 tsp prepared horseradish

      • ½ tsp salt

      • ½ tsp black pepper

      • ¼ tsp cayenne pepper

    • Whisk together until smooth and well combined.

    • Set aside for as long as you can wait (best results if you keep in the refrigerator for 24 hours+ to let the flavors combine)

  • Finally, let’s get the wings ready

    • Use paper towels to pat your wings dry, once dried, place them in a large bowl.

    • In a separate bowl, combine your seasoning by combining the 3/4 tsp salt, 1/2 tsp cracker black pepper , 1 tsp garlic powder, 1 tsp paprika, and 2 tbsp baking powder in a small bowl.

    • Sprinkle the seasoning over the wings, tossing to evenly coat.

    • Arrange your wings, skin side up, in single layer on your aluminum foil lined baking sheet.

    • Bake in the oven, turning every 20 minutes until wings are crispy and browned. The total cook time will depend on the size of the wings but expect it to take up to 1 hour.

    • Remove from oven and let stand for minimum of 5 minutes.

    • Transfer wings to a bowl and toss with sauce.
