Bab’s Tortilla and Pepita Salad
Claire is my sister-in-law, and she is quite the cook. My little brother is lucky to be marrying such an amazing woman, for far more reasons than just her cooking — she’s funny, smart, hard-working, down-to-earth, one of the most competitive women I know, and has never met a stranger. Naturally, she endeared herself to all of us in an instant. This recipe is one of her favorites from home - it’s one of her favorites from her mom, Babs’ kitchen, and as a result, I think this one is best enjoyed with family!

What You’ll Need
For the Salad
3 heads romaine lettuce, chopped
2 avocados, cubed
1 cup queso blanco cheese, cubed
1/2 small red onion, chopped
1 bunch cilantro, chopped
1 bunch basil, chopped
1/4 cup pepitas
2 cups tortilla chips, smashed
For the Dressing
1 tbs honey
1 tbs balsamic vinegar
1/2 tbs lime juice
1/4 cup of olive oil
How To Make
First, let’s get our salad ready
In a large bowl, combine romaine, avocado, red onion, cilantro, basil, pepitas, and queso blanco, and toss.
Next, let’s combine our salad dressing
In a small bowl, combine honey, balsamic, lime juice and olive oil, and whisk together until combined.
When ready to serve, combine the following
In your large bowl with salad base already combined, add crushed tortilla chips and salad dressing, and toss.
