Seester Brad's Healthy-ish Mac
When my mom was pregnant with my little brother, I was so so excited! “I can’t wait to have a little brother” I would exclaim. The day she came home from the hospital, I took one look at my new little brother and I said… “But mom, I wanted a girl brother.” LMFAO. And so began the first day of the rest of my life, as an older sister. Not to a sister, but to a brother, who these days, begrudgingly lets me call him “Seester.” My Seester is one of the greatest guys on earth. He’s funny, he’s smart, he’s organized, he’s always got a plan, and even his plan has a plan. He’s someone you can give a big thing to and he will not only get it done, but better than you expected and either delivered early or right on time. He also knows how to turn up, and have a damn good time. His name is Brad, after all. And sometimes, a Brad’s gotta Brad. What follows is my Little Seester, Brad'’s favorite mac and cheese recipe. A classic from the Mahan Family diet growing up. It’s healthy-ish because you use cottage cheese and there’s no butter involved. Not like Emma’s Mac.

What You’ll Need
1 lb of pasta
1 tsp olive oil
2 small onions, chopped
4 cups cottage cheese
2 cups sour cream
2 lb sharp cheddar cheese, shredded
4 tbs parmesan cheese
salt, pepper, and parsley, to taste
How to Make
Preheat your oven to 350 °F
First, let’s cook our noodles.
Boil a pot of water and get your noodles started. Cook to al dente per the instructions on the box, and strain.
Next, let’s get our onions ready.
Next, in a saucepan, warm olive oil, add then add onions, cooking on medium heat until soft.
Now, let’s combine everything in an oven-ready dish.
Transfer your noodles and onions to an oven-safe baking dish, and add in cottage cheese, sour cream, cheddar cheese, and salt, pepper, and parsley to taste. Combine well, until all ingredients are evenly distributed over the noodles. Top with parmesan cheese.
Time to Bake!
Bake for 35-40 mins, or until top is starting to brown. Let cool before serving. This will be piping hot! lol
