Charred Peppers with Burrata

I’ve never met a burrata I didn’t like, but one of my top burrata’s ever was at Restoration Hardware’s restaurant. It’s served alongside charred bell peppers with a fabulous vinaigrette, and grilled ciabatta bread. It’s a game-changer, a crowd-pleaser, and honestly the perfect, simple dish to make for your next girls’ night.

What You’ll Need

Vinaigrette

  • 1/4 cup olive oil

  • 2 tbs honey

  • 2 tbs roasted pistachios, finely chopped

  • 1 lemon, lemon

  • 2 tbs white wine vinegar

  • 2 tbs fresh basil, chopped

  • 2 tbs fresh chives, chopped

  • 1 tbs fresh thyme, chopped

  • 2 cloves garlic, chopped

  • Salt, black pepper, and red pepper flakes, to taste

Bell Peppers

  • 1 lb bell peppers

  • 3 tbs olive oil

  • 1/2 tsp paprika

  • 1/2 tsp chili powder

  • Salt, and black pepper, to taste

Bread

  • 1 loaf ciabatta bread, sliced

Burrata

  • 8 oz burrata cheese

How to Make

Preheat the grill or grill pan to high.

  • First, make your vinaigrette

    • Combine olive oil, honey, pistachios, lemon juice, vinegar, basil, chives, thyme, garlic, salt, pepper, and chili flakes, whisk until smooth.

  • Next, prep your peppers

    • Toss the peppers olive oil, paprika, chili powder, salt and pepper. Place the bread on a baking sheet and drizzle with olive oil on both sides of each slice, season with salt.

  • Now grill your bread and peppers

    • Place bread on the grill, grilling for 2-3 minutes per side or until lightly toasted. Remove from the grill. At the same time, grill the peppers until softened and charred, 3-4 minutes per side. Remove from the grill and arrange on a serving plate.

  • Finally, prep your burrata for serving

    • Add ball of burrata to center of the plate. Add peppers in a stack near burrata. Drizzle half of the vinaigrette over peppers. Serve with grilled bread, and remaining vinaigrette.
