Priya’s Ground Beef & Sweet Potato Bowl
If you’ve been reading my content for any amount of time, you have probably figured out by now that I love The Skinny Confidential Podcast. Lauryn Bosstick is so funny, down-to-earth, and has this IDGAF energy and way of speaking her mind that I think is the greatest. Lauryn has been on a two year, 60lb weight loss journey that she began after having her second baby. Among other things (like hiring a trainer and prioritizing heavy lifting), she raves about this ground beef bowl that she eats daily to keep her satiated throughout the day, and she swears it’s helped her lose the weight!
I am in the process of losing some of the extra pounds I gained when carrying Charlie (my 8 month old daughter) and have been wondering about this beef bowl, and frankly, contemplating coming up with my own version of it. Separately, I recently hired a trainer and nutrition coach and as we’re getting our relationship and program underway, I’ve been tasked with counting macros (maybe I will write an article on this at some point, because I think it’s a useful thing to do). So here I was, looking for a beef bowl recipe, that would help me get a good mix of macronutrients (to work towards my daily count) and voila! as if destiny, a prev. podcast guest of mine, Priya Mulvihill (xRX Bar, currently Co-Founder of You Again Foods), posted a beef bowl that she makes on Instagram! I slid into her DM’s saying “OMG I neeeeeeed this recipe” before clicking through to the next story, were of course, she had already posted it!
So below you will find what is basically Priya’s recipe, with a few of my own swaps, all inspired by Lauryn Bosstick!

Cook Time — ~45 Mins
Materials
Chefs knife
Large sauce pan
1 cookie sheet
Parchment paper
What you Need
2lbs ground, grass fed beef (I like Verde)
1 yellow onion
2 sweet potatoes, cubed
2 avocados
4 tbs olive oil (I like Graza bc the squeeze tube)
Bonus points: In our house — Sour Cream, Shredded Cheese (if you have not tried Tillamook, are you even alive?), or Hot Sauce! (Ronnie did all of these as extras when we made ours); On the other hand, Priya recommends — Primal Kitchen Mayo and Ketchup, and chopped tomatoes.
How to Make it
You’ll be making your sweet potatoes and beef in parallel, then combining them at the end.
Sweet Potatoes
Preheat your oven to 425
Cube your sweet potatoes
Line your cookie sheet with parchment paper and load the sweet potatoes onto the cookie sheet
Drizzle 2 tbs of olive oil over the sweet potatoes
Put sweet potatoes in the oven for 20 mins
Take sweet potatoes out of the oven, turn then to cook the side that was previously face-down, face-up
Put sweet potatoes in the oven again for 20 mins
Take them out and set them aside
Meat
Dice your onion
Pour 2tbs of olive oil into your large sauce pan and then add in your diced onion, cook over medium heat until soft and becoming translucent, about 5 minutes, stirring frequently enough that you don’t burn them :)
Add 2lbs of your ground grass fed beef to your cooked onions
Add your entire pack of Siete seasoning over the top of your ground beef
Stir this mix together, over medium heat, until fully combined
Let cook until meat is fully browned (general rule of thumb is that ground beef should be cooked to a minimum internal temperature of 160°F)
Mix it together!
Cut your avocados into halves and extract avocado meat from the skin, I like to chop my avocado into cubes, but slices work too
Combine your Meat and Sweet Potatoes in a large bowl
Serve from the Meat and Potatoes mixture, adding avocado over the top as a garnish!
Bonus points if you want to add: Sour Cream, Shredded Cheese, or Hot Sauce! (Ronnie did all of these as extras when we made ours)
