Healthy Butter Chicken

What you’ll need

For the Butter Chicken

  • 2 lbs. boneless, skinless chicken breasts, cut into 1-inch cubes

  • ¼ cup tomato paste

  • ¼ cup plain Greek yogurt

  • 1 tablespoon lemon juice

  • 2 teaspoons cumin

  • 2 teaspoons garam masala (if you don’t have, you can use curry powder instead)

  • 1 teaspoon ground coriander

  • 1 teaspoon salt

  • 1 teaspoon ground ginger

  • ¾ teaspoons black pepper

  • ½ teaspoon turmeric

  • ½ teaspoon cinnamon

  • ¼ teaspoon cayenne pepper

For Cooking

  • 1 tablespoon avocado oil

  • 1 small onion, diced

  • 5 cloves garlic, minced

  • 2 tablespoons light brown sugar

  • ½ cup plain Greek yogurt

  • ½ cup water

How to Make

  1. Combine all of the marinate ingredients in a medium sized bowl and stir well, it will be thick!

  2. Place cut pieces of chicken in a large bowl and pour the marinate ingredients over the chicken and stir to coat all of the chicken.

  3. Let marinate for at least 30 minutes and up to 8 hours (see notes).

  4. Heat a large skillet over medium-high heat. Add avocado oil.

  5. Add onion and cook for 2-3 minutes, until soft. Add garlic and cook for an additional minute.

  6. Add marinated chicken and all of the marinade to the pan.

  7. Sprinkle with brown sugar and cook for 2-3 minutes.

  8. Reduce heat to medium/medium-low (you want to be low enough to not curdle the yogurt, but high enough to maintain a simmer) and add the yogurt and water.

  9. Let cook for 8-10 minutes, until the chicken is cooked through and sauce is thickened.

  10. Season to taste with salt and pepper (it may not need any).

  11. Serve the chicken hot with extra sauce spooned over top.
