Charlita’s Key Lime Pie Mojitas
One thing you need to know about me is I love a key lime pie. Its known through my family that I will stop at any restaurant in the Florida Keys that advertises that they have “The Best Key Lime Pie” in the Keys… because you never know, right?
On a totally different note, I was picking up Charlie the other day at school, and someone said “Charlita Mojita!!!” as she ran up to them to give a goodbye hug, and I thought that was just so cute. I realized shortly thereafter that Margaux’s name could easily inspire a “Margauxrita” and thus, delicious cocktails inspired by my daughters were born.
What follows is my take on the most fabulous mojito of all time, because Charlie is the best and she deserves nothing but the best for her namesake cocktail.
What You’ll Need
For the Cocktail
6 oz white rum
4 tbsp fresh Key lime juice (about 4-8 limes)
2 tbsp agave nectar (plus extra for rimming glasses)
2 tbsp heavy cream for a creamy pie-like finish
Ice
For the Glass Rim (optional but amazing)
Crushed graham crackers (≈1/4 cup)
Agave nectar (for rim)
Key lime rounds
How to Make
First, let’s prepare our glasses: Pour a little simple syrup on a small plate and crush graham crackers on another. Dip the rim of each glass into the syrup, then into the graham crackers to create a crust effect.
Next, let’s mix up our cocktail: Add lime juice, rum, agave nectar, and heavy cream to the shaker with ice. Shake vigorously until chilled and slightly frothy.
Now, you are ready to serve! Fill glasses with ice and strain the cocktail mixture evenly. Add a key lime round on top for presentation.
