Honey Lemon Salmon with Broccolini

Serves — 4

What You’ll Need:

Salmon

  • 4 5 oz salmon filets

  • 16 oz (1 lb) broccolini

  • 2 tbs olive oil

  • Salt and pepper, to taste

Honey Lemon Sauce

  • ¼ cup honey

  • ¼ cup water

  • 1 lemon, juiced

  • 2 cloves garlic, minced

  • 2 tbs soy sauce

  • 1 tbs sesame oil

  • 2 tsp cornstarch

How to Make:

Pre-heat oven to 425°F.

  • First, let’s get the salmon in the oven.

    • Arrange salmon and broccolini on a sheet pan.

    • Brush the salmon with olive oil, and toss the broccolini to coat.

    • Season with salt and pepper.

    • Bake for 10 minutes.

  • While the salmon bakes, let’s get the sauce ready.

    • Combine honey, water, lemon, garlic, soy sauce, sesame oil and cornstarch in a small bowl.

  • After 10 minutes, pull the salmon out of the oven and drizzle with sauce.

  • Finish the salmon by broiling for 2-5 minutes, then rotate halfway, and broil for another 2-5 minutes.

  • Finally, serve the salmon and broccolini on it’s own, or over rice, if you want to get in the extra carbs.
