Peanut Butter Chocolate Chip Banana Bread

When Charlie was born, the hospital sent us home with Banana Bread. I never tasted anything more delicious in my life. Ever since, I can’t stop making it for Ronnie and myself. Every week, I look forward to buying bananas at the store, simply to let them ripen on my counter all week, so they will be just perfect for this Banana Bread.

Serves: 4

Prep time: 1.5 hrs

What You’ll Need

  • 2 large eggs

  • 1/2 cup of salted butter

  • 1/2 cup of brown sugar

  • 1/2 cup of granulated sugar

  • 1 1/3 cups of flour

  • 1 tsp baking soda

  • 1 tsp vanilla extract

  • 1/2 cup of sour cream

  • 1 1/2 cups bananas , ripe and mashed (~3-4 bananas)

  • 1/2 cup chocolate chips

  • 1/2 cup peanut butter

  • 1/2 cup walnuts, chopped

How to Make

Preheat your oven to 325 °F

  • First, prepare your dry ingredients

    • In a large mixing bowl, mix together flour, baking soda.

  • Now, prepare your wet ingredients

    • In a separate bowl, mix together — melted butter, brown sugar, and granulated sugar.

    • Once mixed, add to this mixture your 2 eggs, vanilla, sour cream, and mashed bananas.

  • Pour the wet ingredients into the dry ingredients and use a spatula to mix until just combined

    • A little at a time, folding in the wet ingredients with the dry ones. Once combined, add in the chocolate chips, peanut butter, and walnuts, stirring to mix.

  • Finally, we’re ready to bake

    • Pour mix into a greased 9x5 loaf baking dish. Bake for 1 hour and 15 minutes. Let cool for at least 2 hours before serving. Bonus points if you put it in the fridge overnight, so it’s nice and cool and dense.

Enjoy!
