Charlie’s Delivery Nurse’s Walnut, Peanut Butter and Chocolate Chip Banana Bread

When Charlie was born, the hospital sent us home with Banana Bread. I never tasted anything more delicious in my life. Ever since, I can’t stop making it for Ronnie and myself. Every week, I look forward to buying bananas at Trader Joes, simply to let them “rot” on my counter all week, so they will be perfectly gross for Banana Bread.

After a few tries, I’ve perfected the recipe, so time to share with you, dear reader.

What you’ll need:

  • 2 large eggs

  • 1/2 cup of salted butter

  • 1/2 cup of brown sugar

  • 1/2 cup of granulated sugar

  • 1 1/3 cups of flour

  • 1 tsp baking soda

  • 1 tsp vanilla extract

  • 1/2 cup of sour cream

  • 1 1/2 cupts of ripe and mashed bananas (3 or 4 bananas will do!)

  • 1/2 cup of chocolate chips

  • 1/2 cup of peanut butter chocolate chip; or Justin’s peanut butter

  • 1/2 cup of chopped walnuts

How to make:

  • Preheat your oven to 325

  • Grease a 9x5 loaf pyrex

  • In a large mixing bowl, mix together — flour, baking soda

  • In a separate bowl, mix together — melted butter, brown sugar, granulated sugar, once mixed, add to this mixture your 2 eggs, vanilla, sour cream, and mashed bananas

  • Next, combine the flour mixture with the wet mixture, by folding in the wet ingredients to the dry ones

  • Finally, add in the chocolate chips, peanut butter chips, and walnuts

  • Bake in the oven for 1 hour and 15 mins

Let cool for at least 2 hours before serving. Bonus points if you put it in the fridge overnight, so it’s nice and cool and dense. Yum!
