Korean Beef Lettuce Wraps

Servings — 12 lettuce wraps
What You’ll Need
Beef
1 lb ground beef
1 cup of shredded carrots
4 tbs soy sauce
3 cloves garlic, minced
1 tbs freshly grated ginger
3 tbs brown sugar
1 tsp sriracha
2 tsp cornstarch
Wraps
12 butter lettuce leaves
1 cup cucumber, thinly sliced
1 cup red bell pepper, thinly sliced
1/4 jalapeno, thinly sliced
1 green onion, sliced (optional as a garnish)
1 tbs sesame seeds (optional as a garnish)
How to Make
Beef
Heat a large skillet over medium-high heat and add sesame oil.
Once the skillet is hot, add the ground beef and brown until it is almost cooked through (about 5 minutes).
Add the sliced carrots, soften the carrots while the beef finishes cooking.
Add soy sauce, garlic, ginger, brown sugar, and sriracha to the pan with the cooked beef and stir well, to coat the beef as evenly as you can. A sauce will form while you stir.
In a separate bowl, combine cornstarch and water, whisking with a fork until the cornstarch has dissolved.
Now, add the cornstarch mixture to the pan with the beef and stir well as the sauce thickens.
Wraps
Remove the pan from the heat and serve the beef mixture in its sauce in the lettuce wraps, garnishing with green onion, sesame, cucumber, bell pepper and even some jalapenos if you want some extra heat :)
