Peanut Chicken Lettuce Wraps

Servings — 8 lettuce wraps
What You’ll Need
Chicken
1 lb. lean ground chicken
1 yellow onion, chopped
Peanut Sauce
1 cup peanut butter
1/2 cup water
1/8 tsp. ground cinnamon
2 tbs. honey
1/4 cup soy sauce
3 tbs. red curry paste
2 cloves garlic, minced
1/4 tsp. red pepper flakes
Wraps
8 butter lettuce leaves
1 bell pepper, sliced thinly
1 cup of carrots, sliced
1 cup cucumber, sliced
1/4 cup chopped peanuts
1/4 cup green onions, sliced
2 limes, quartered
How to Make
First, let’s make our peanut sauce:
In a medium bowl combine peanut butter, water, ground cinnamon, honey, soy sauce, red curry paste, garlic, and red pepper flakes, until well combined.
Set aside.
Next, we will get our chicken ready:
Spray a large skillet over medium heat with nonstick cooking spray (I like to use the avocado oil spray from Trader Joe’s).
Add the onion and cook about 2-3 mins or until soft and translucent.
Add the ground chicken and cook, breaking into bite sized pieces until cooked through, approximately 5 minutes.
Once cooked through, lower heat to low and add ¼ cup of the peanut sauce mixing to evenly coat the chicken.
Let the chicken simmer while you prepare you lettuce wraps.
Finally, we’ll get our lettuce wraps ready:
Evenly split the cooked chicken between each piece of lettuce, with desired add-ins like bell pepper, cucumber and carrots, green onions and peanuts.
Top with peanut sauce to taste.
