Peanut Chicken Lettuce Wraps

Servings — 8 lettuce wraps

What You’ll Need

Chicken

  • 1 lb. lean ground chicken

  • 1 yellow onion, chopped

Peanut Sauce

  • 1 cup peanut butter

  • 1/2 cup water

  • 1/8 tsp. ground cinnamon

  • 2 tbs. honey

  • 1/4 cup soy sauce

  • 3 tbs. red curry paste

  • 2 cloves garlic, minced

  • 1/4 tsp. red pepper flakes

Wraps

  • 8 butter lettuce leaves

  • 1 bell pepper, sliced thinly

  • 1 cup of carrots, sliced

  • 1 cup cucumber, sliced

  • 1/4 cup chopped peanuts

  • 1/4 cup green onions, sliced

  • 2 limes, quartered

How to Make

  • First, let’s make our peanut sauce:

    • In a medium bowl combine peanut butter, water, ground cinnamon, honey, soy sauce, red curry paste, garlic, and red pepper flakes, until well combined.

    • Set aside.

  • Next, we will get our chicken ready:

    • Spray a large skillet over medium heat with nonstick cooking spray (I like to use the avocado oil spray from Trader Joe’s).

    • Add the onion and cook about 2-3 mins or until soft and translucent.

    • Add the ground chicken and cook, breaking into bite sized pieces until cooked through, approximately 5 minutes.

    • Once cooked through, lower heat to low and add ¼ cup of the peanut sauce mixing to evenly coat the chicken.

    • Let the chicken simmer while you prepare you lettuce wraps.

  • Finally, we’ll get our lettuce wraps ready:

    • Evenly split the cooked chicken between each piece of lettuce, with desired add-ins like bell pepper, cucumber and carrots, green onions and peanuts.

    • Top with peanut sauce to taste.
