Mendocino Farms Thai Mango Salad Dupe

What You’ll Need

Shredded Chicken

  • 2 lbs chicken breasts

  • 2 cup chicken broth

  • 2 tbs olive oil

  • 1 tsp salt

  • 1 tsp pepper

Ramen

  • 2 cup chicken broth

  • 2 3 oz packs ramen noodles (discard seasoning packs)

Thai Dressing

  • 1/4 cup almond butter

  • 1/4 cup rice vinegar

  • 1/4 cup almond milk

  • 1/4 cup coconut milk

  • 2 tbs sriracha

  • 1 tbs soy sauce

  • 1 lime, juiced

Salad

  • 4 cup napa cabbage, chopped

  • 4 cup dino kale, chopped

  • 2 cup mango, diced

  • 2 cup avocado, sliced

  • 1 cup basil, chopped

  • 1 cup mint, chopped

  • 1 cup cilantro, chopped

  • 1 cup pickled carrots and daikon

  • 1 cup roasted almonds, sliced



How to Make

  • First, let’s prepare our shredded chicken.

    • Add olive oil to pan over medium heat, add chicken, sprinkle salt and pepper generously on top. Let cook for 5 minutes until slightly golden, then flip chicken. Add chicken broth and cook for another 7-10 minutes (internal temp is 165°F). Place cooked breasts on cutting board, and using two forks, separate the chicken meat until it’s shredded. Set aside.

  • Next, let’s get your ramen ready.

    • Using the same pan, add 2 cups of chicken broth and let boil. Add ramen and cook until done, ~3 minutes (*** Optional: I like to boil mine until all the liquid is evaporated and the ramen touching the pan starts to turn golden brown). Remove from heat, and set aside.

  • Now, for the Thai Dressing.

    • Add all ingredients to a bowl, whisking thoroughly to fully combine.

  • Time to compile your salad bowls!

    • Combine chicken, ramen, cabbage, kale, mango, avocado, basil, mint, cilantro, pickled carrots and daikon, and almonds. Top with Thai Dressing, to taste.

How to Enjoy

This is my go-to order whenever I am solo-traveling to southern California, and don’t want to leave my hotel room for dinner. Now, I’ve made it a habit of putting it together when Ronnie is out of town for work, and I am home solo, left to my own devices to make or order whatever my heart desires. Enjoy solo, or with pals! You can’t go wrong. It’s a salad, but it’s really a meal mascarading as a salad.
