What you’ll Need:

  • 1 1/2 lb filet mignon steak, sliced

  • 2 lb red potatoes, quartered

  • 1 lb broccolini

  • 3-4 garlic cloves

  • 1 tsp parsley

  • 5 tbs parmesan

  • 3 1/2 tbs olive oil

  • 1 lemon, halved

  • Salt and pepper, to taste

How to Make:

Preheat oven to broil, high.

  • First, let’s get our potatoes going.

    • In a medium bowl, toss together potatoes, olive oil, parmesan, 1 minced garlic clove, parsley, and salt and pepper, to taste. Toss well to coat evenly. Spread potatoes evenly on sheet pan and broil for 6-8 minutes or until they just start to lightly brown.

  • Next, let’s get our filet and broccolini rocking.

    • In a medium bowl, spread olive oil, garlic, salt and pepper, and parmesan onto steaks and broccolini. When potatoes are ready, push them to the side and place steak next to them. Place pan back into oven and broil cooking steak each side 3-6 minutes on each side, checking for desired doneness (for medium rare, steak should be between 130° and 135° F; for medium 135–145°F).

  • We’re ready to eat!

    • Remove pan from oven and allow to rest for 5-10 minutes. Garnish with an extra sprinkle of parmesan, parsley, and lemon juice. Enjoy!
