RH Gem Salad

You arrive for lunch in her conservatory (yes, she has a conservatory now), a space brimming with opulent furniture and anchored by a glittering water feature at its center. Fresh herbs spill from planters beside each seating area, perfuming the air. She brings you this salad, every ingredient raised for you in these garden beds. What You’ll Need

  • For the Salad

    • 2 Little Gem lettuce heads (or one ~ 6 oz pre-washed package), thickly cut

    • 2 Avocados, thickly cut

    • 4 Radishes, thinly sliced

    • 1/2 shallot, thinly sliced and pickled

      • Note: to pickle, thinly slice shallots and sprinkle with salt, then submerge in 1 part hot water, 1/2 part vinegar (e.g. Apple Cider Vinegar, White Wine Vinegar) for 10 mins.

    • 1/2 cup feta, crumbled

    • Lemon zest, to taste

  • For the Dressing

    • 5 tbs mayo

    • 4 tbs olive oil

    • 2 tsp dijon mustard

    • 1 lemon, juiced

    • Fresh mint, to taste

    • Fresh tarragon, to taste

    • Salt and pepper, to taste

How to Make

  • First, let’s prepare our dressing.

    • In a food processor, combine salad ingredients until smooth and creamy.

  • Next, let’s compile our salad.

    • Use gem lettuce at the bottom of your plate, place avocado, radishes, and shallot on top of lettuce. Drizzle dressing over the top of salad. Finish with lemon zest and crumbled feta.
