RH Gem Salad

What You’ll Need
For the Salad
2 Little Gem lettuce heads (or one ~ 6 oz pre-washed package), thickly cut
2 Avocados, thickly cut
4 Radishes, thinly sliced
1/2 shallot, thinly sliced and pickled
Note: to pickle, thinly slice shallots and sprinkle with salt, then submerge in 1 part hot water, 1/2 part vinegar (e.g. Apple Cider Vinegar, White Wine Vinegar) for 10 mins.
1/2 cup feta, crumbled
Lemon zest, to taste
For the Dressing
5 tbs mayo
4 tbs olive oil
2 tsp dijon mustard
1 lemon, juiced
Fresh mint, to taste
Fresh tarragon, to taste
Salt and pepper, to taste
How to Make
First, let’s prepare our dressing.
In a food processor, combine salad ingredients until smooth and creamy.
Next, let’s compile our salad.
Use gem lettuce at the bottom of your plate, place avocado, radishes, and shallot on top of lettuce. Drizzle dressing over the top of salad. Finish with lemon zest and crumbled feta.
