2 lbs pork tenderloin or boneless pork chops, cut into 1½-inch chunks
1 red bell pepper, sliced
1 green bell pepper, sliced
1 red onion, cut into wedges
1½ cups pineapple chunks (fresh or canned, drained)
Sauce
¼ cup soy sauce
¼ cup honey
2 tbsp olive oil
2 tbsp pineapple juice (from the can or fresh)
1 tsp garlic powder
1 tsp onion powder
½ tsp ground ginger (optional but VERY good)
Salt + black pepper
How to Make
Preheat oven to 400°F.
First, let’s prep our glaze and coat our pork.
In a large bowl, whisk together soy sauce, honey, olive oil, pineapple juice, garlic powder, onion powder, ginger, salt, and pepper. Add pork pieces to the bowl and toss until glossy and well coated.
Next, it’s time to assemble the pan.
Spread pork, peppers, onion, and pineapple on the sheet pan in a single layer. Drizzle any extra sauce over everything.
Now, it’s time to roast!
Bake in oven for ~22 minutes, flipping once halfway through, until Pork is caramelized and cooked through Pineapple is golden Veggies are tender with crispy edges. Broil 2–3 minutes at the end to get sticky, charred edges (highly recommended).
