February Recap

February, unlike January, has come and gone in the blink of an eye. In the midwest, it’s one of those months where the weather is a bit of a toss-up. It could be -20 one day, and 50 the next. The fifty degree days, and the after 5pm sunsets give us hope and a glimmer of anticipation for the spring that’s waiting on the other side of the month. This February was no different. As a result, I filled my non-working hours with indoor joys like reading, writing, listening to podcasts, and enjoying my shows!

Charlie is 17 months now, and she’s a lot of fun. She solves simple puzzles, loves to stack blocks, enjoys being in the kitchen with mama, and is always down to sit on my lap and read a book. It’s a rare occasion when she wants to give me a snuggle that lasts longer than 20 minutes, but when she does, it is glorious. She is also one heck of a daddy’s girl.

This month, I filled my personal cup spending long Saturdays with girlfriends on playdates with Charlie and intentional time with Ronnie and Charlie, as a family.

Next month, I’ll be turning 34. It’s wild to think how quick this trip around the sun has been. So much has changed since I blew out my 33 candles, and there is a whole lot to be grateful for.

Carrot Cake even better Cold

I have been obsessed with this Carrot Cake recipe from Alison Roman and wanted to make sure I didn’t lose it, so I dropped it on my blog, where I can come back to it over and over again... Like this weekend, because it’s my birthday weekend and there is NOTHING better than a fabulous cake on your birthday. 10/10 recommend that you refrigerate for at least 12 hours before consuming. This cake gets better the colder it gets <3

Okay here’s the deal, the recipe I am sharing does not look like the photo above, but I am SO excited because my local bakery, Mad Batter, is making me a fabulous 2 tier carrot cake with cream cheese frosting and this insanely cute pink fondant bow. I think the last time I had a birthday cake made for me for a birthday was my 21st, but after having Charlie’s 1st Birthday Cake turn out so cute, I decided that why not also treat myself to a birthday cake? How fabulous!

Alright, I can’t wait to share pics of how my cake turns out, but in the meantime if you want to enjoy an incredibly delish carrot cake with me this weekend, enjoy the recipe linked below! <3
