Bacon and Gruyere Egg Bites (Starbucks Dupe)

As far as Ronnie and I are concerned, done having kids, which means its time to move on from my pregnancy and post-partum body era to my next era of strong, confident, fit back into my favorite clothes era! As I focus on my personal health and strength, I’ve found that the more I meal-prep the easier it is for me to stay focused on my diet and see forward progress towards my goals. These egg bites have become a staple in my meal prep process. They are easy, delicious, and save me the $6.75 or so it costs to buy them at Starbucks :)

What You’ll Need

  • 4.3 oz bag of bacon bits

  • 6 large eggs

  • 1 ¼ cup cottage cheese

  • 1 ¼ cups shredded Gruyère

  • 2 tbs cornstarch

  • Salt & pepper, to taste

How to Make

Preheat oven to 300°F.

  • First, let’s prep what we need to cook these egg bite babies going

    • Boil a pot of water (for your “water bath”), and grease a muffin tin.

  • Next, let’s get our egg base ready

    • In a blender, combine eggs, cottage cheese, cornstarch, salt, and pepper, until smooth and frothy (~30 seconds). Stir in Gruyère by hand.

  • After, it’s time to assemble each bite

    • Divide bacon bits evenly between muffin cups (save a few for topping). Pour egg mixture over the bacon, filling each cup about ¾ full. Sprinkle a little extra Gruyère and bacon on top.

  • Now, time to bake using this “Water Bath” method.

    • Place muffin tin inside a larger baking dish. Carefully pour hot water into the larger dish until it reaches halfway up the sides of the muffin tin. Bake for 30–35 minutes, or until the egg bites are just set in the center.

  • Finally, cool and serve!

    • Let cool for 5–10 minutes before removing from muffin tin. Serve warm, or refrigerate for up to 5 days.
