Gabby’s No Knead Bread

Leading Lady Spotlight: Gabby.

Gabby and I met working for the same tech company in Chicago. One day, shortly after she started, she asked me to lunch, and I said yes. Little did I know that one of the most monumental friendships of my life would begin that day! Gabby is like the sun, she is bright, warm, has the greatest smile, the greatest laugh, and the most charming ways about her. She comes from a loving family, has two siblings she adores (she’s the oldest), and now has baby boy twins of her own. One of the things I love most about Gabby is her zest for life, and her sense of adventure. It doesn’t matter if she and I are floating in the pool, or jumping out of planes (with parachutes on!). Gabby is down. I can’t believe how lucky I am to have her in my life. What follows is one of Gabby’s favorite recipes to have made for her, and to make for her people. You know that when someone sends you a hand-written recipe card it’s going to be a good one. Enjoy!

What You’ll Need

  • Bread

    • 3 cups and 2 tbs flour

    • 2 tsp coarse sea salt

    • 1/2 tsp active dry yeast

    • 1 jalapeño diced

    • 1 cup cheddar cheese, shredded

    • 1 1/2 cups warm water

  • Kitchen things

    • Parchment Paper

    • Dutch Oven



How to Make

  • First, let’s make our flour mixture.

    • Add flour, salt, cheese and jalapeños to medium mixing bowl.

  • Now, we’ll combine our water, yeast, and flour mixture to create dough.

    • Add warm water and yeast to large mixing bowl – then add flour mixture. The water should be warm to the touch, but not hot. Stir together and fold dough in on itself. Fold the dough from the outside of the bowl towards the center, turning the bowl a little each time, until you’ve folded the dough in on itself 8-10 times.

  • Next, we need to let our dough rise.

    • Lay out cut parchment paper and lightly flour. Tip bowl toward yourself and gently scoop dough onto paper forming a ball. Place bread in parchment paper into a smaller bowl for ~30 min to maintain shape. Cover with damp tea towel.

  • While the dough rises, preheat oven to 475°F

    • While the oven preheats, place your empty dutch oven, with the lid on, inside the oven, letting it heat up for ~30 minutes. After 30 mins, carefully remove pot.

  • Now, it’s time to bake our bread in the dutch oven with the lid on.

    • With your dutch oven still piping hot, place parchment paper with bread inside, into the dutch oven. Replace lid, and bake for 30 mins.

  • Finally, we’re going to finish the bread with the dutch oven lid off.

    • Remove lid and bake for another 15 mins.

  • Let cool, and then enjoy!

    • Remove loaf and let cool on counter wire rack for 30 min. Enjoy! and know that you can store in fridge for up to 1 week.
