Lauren’s Baked Beans
Leading Lady Spotlight: Lauren.
Lauren and I met when we signed our letters of intent to play Rugby for Eastern Illinois University. Our coach connected us, hoping that we’d be roommates. We couldn’t have been more different: Lauren was into gangster rap, I was into John Mayer. Lauren was in a long-term relationship, I was single and ready to mingle. Lauren went to school so she could play sports, I went to school so I could be a teacher’s pet. Lauren said “warsh your hands” and I asked if that made them dirtier. Yet, fifteen years later, we’re still the best of pals. Lauren was the MOH in our wedding, and just retired from Rugby after 3 olympics (Rio, Tokyo, and Paris), and one Olympic Bronze medal. She’s one of the best people I’ve ever known. And one of the best people she’s ever known was Mama (pronounced MuhMwah), Mama was her best friend, confidant, and grandmother. These Mama’s baked beans.

What You’ll Need
Baked Beans
2 slices of bacon, diced
1 small sweet onion, chopped
3 tbs barbecue sauce
3 tbs ketchup
2 tbs dijon mustard
1 tbs brown sugar
2 (22 oz) cans baked beans
1 (12 ounce) bag of all beef lil weenies

How to Make
Preheat oven to 350°F
First, let’s prepare our bacon and onions.
Heat a large, oven-safe skillet over medium-low heat and add the bacon. Cook until it’s brown and crisp and most of the fat is rendered ~5-10 minutes. With bacon fully cooked, stir in the onion, cooking until soft, ~5 minutes.
Now, add in your sauces and sugar.
Stir in barbecue sauce, ketchup, mustard and brown sugar until combined.
Next, add in weenies and beans and bring to a boil.
Stir in beef weenies and baked beans (directly from the can). Bring the mixture to a boil, then turn off the heat.
Finally, move bean mixture to the oven.
Place oven-safe skillet in the oven and bake for 30 to 35 minutes, until bubbly and syrup-y. Remove and let cool slightly before serving.
