Kasia’s Dad’s Ultimate Seafood Dip

Leading Lady Spotlight: You probably know this already, because I write about her all the time, but Kasia is one of my dearest friends. She’s smart, thoughtful, interesting, curious, a phenomenal writer, and a really wonderful friend. One of the things that I admire most about Kasia is how intentional she is about how she builds everything — whether it’s her relationships, her business venture, her home, or how she approaches her writing, Kasia has a goal, a plan, an operating system, and a retrospection process. She and James Clear are my two favorite writers in the world. You can subscribe to her newsletter, here. This recipe is her dad’s go-to for the holidays with his girls (Kasia, her two sisters, and her mom). So I think it goes best with family! Alright, let’s get to the recipe!

What You’ll Need

For the Seafood

  • 2 Crab Legs (large)

  • 1 lb Shrimp

  • 3 Lobster Tails

  • Old Bay Seasoning, to taste

  • 3 tbs butter

For the Dip

  • 3 8oz packages of cream cheese

  • 1 8 oz package of sour cream

  • 1 tbs lemon juice

  • 1 tbs horseradish

  • 1 tsp garlic

  • 1 8 oz bag of cheddar cheese, shredded

  • Salt and pepper, to taste

How to Make

Preheat oven to 350°F

  • First, let’s prepare our seafood.

    • Remove seafood from casings, so you are just working with the meat of your lobster, crab, and shrimp.

    • Crab - Fill a large pot with water, add Old Bay seasoning to taste, bring to a boil, then fully submerge crab legs, and cook for 3-5 minutes, or until heated through, remove with tongs and set aside.

    • Lobster - Heat a large skillet on the stove over medium heat. Once hot, add 1 tbs butter. With butter is sizzling, place lobster tails in the pan. Let sear for ~1-2 minutes. Then, flip cover the pan with a lid and cook for 2-3 minutes, or until meat is just cooked through (opaque with an internal temperature of 140°F). Remove and set aside.

    • Shrimp - In the same skillet you used for lobster, add 1 tbs butter. With butter sizzling, add shrimp, spreading in an even, single layer. Cook for about 1-2 minutes, then flip to let them cook through (internal temperature of 145°F). Remove and set aside.

    • With all seafood now cooked, cut everything into bite-sized chunks.

  • Now, let’s get our cream cheese dip ready.

    • In a oven-safe cooking dish, fold together cream cheese, sour cream, lemon juice, horseradish, garlic and seafood. Top with shredded cheddar cheese.

  • Finally, let’s bake it all together!

    • Bake for 15-20 minutes or cheddar cheese is fully melted and dish is warmed through.

  • Serve with your favorite crackers or toast points, and enjoy!

Enjoy!
