Health and Happiness

My heritage is Irish and Scottish, and one of my favorite expressions from Ireland is "Sláinte agus sonas"—health and happiness.

In Ireland, sláinte is often used the same way we use "cheers." Glasses clink, friends gather, and someone raises a toast to good health. But I've always loved the fuller expression: health and happiness.

Because when you think about it, isn't that what so much of life comes down to?

We spend our days chasing accomplishments, checking boxes, and hurrying toward the next milestone. Yet when I picture the people I love most, what I want for them isn't a longer to-do list or a more impressive résumé. I want them to be healthy enough to enjoy their lives and happy enough to appreciate them.

Food sits at the center of both.

The meals in this chapter aren't about perfection, restriction, or following every nutritional rule. They're about nourishing your body so you have the energy to chase your dreams, play with your children, take long walks with people you love, and linger around the table a little longer after dinner is done.

So here's to the simple things that matter most.

Sláinte agus sonas.

May your cup be full, your body be strong, and your table surrounded by people you love.
