Diane’s Simple and Delish Baked Brie

Diane is one of my mom’s best friends. She is an interior designer, and has the greatest sense of style, and the best wit and personality. My mom and her friends, Diane included, have an annual tradition of going on a “House Walk” in my hometown, each year after the house walk someone hosts the group for appetizers and wine. This year, I was invited to join, and since the Women of Windham were coming to my town, I offered up my home as the host home. Diane brought this fabulous, festive, easyyy, yet delicious dish to share. So enjoy this dish with your besties on a cozy winter evening. It pairs well with Oma’s Mulled Wine.
What you’ll Need
For Baked Cheese
1 wheel of brie cheese (camembert is also fab!)
1/4 cup dried cranberries
2 tbs pistachios, chopped
1 tbs honey, for drizzling
1 tbs fresh thyme leaves
How to Make
Preheat your oven to 375°F.
First, prepare the cheese
Place the cheese in a small, oven-safe dish or baking paper lined pan. Score the top of the cheese with a crosshatch pattern to help it melt evenly. Then add toppings: Sprinkle crabnberries, pistachios, and thyme leaves over the top of the cheese. Drizzle with honey.
Next, bake the cheese.
Bake for 10-12 minutes, or until the cheese is soft and gooey.
You’re ready to serve!
Serve warm iwht crackers or baguette slices for dipping.
