Hallie’s Lemon-Thyme Chicken

What You’ll Need
2 lbs chicken cutlets
Sea salt and freshly ground black pepper, for seasoning, to taste
1 cup flour, for dredging
3 tbs extra-virgin olive oil
1 large red onion, halved and sliced thinly
4 cloves garlic sliced thinly
¼ cup fresh lemon juice
1 cup chicken stock
3-5 sprigs of fresh thyme
How to Make
First, let’s season our chicken.
Season chicken cutlets on both sides with sea salt and black pepper. Dredge them with flour and shake off the excess.
Next, let’s get the chicken on heat.
Warm olive oil over medium heat in a large skillet. Add chicken and sauté on both sides until golden brown. Transfer to plate.
Now, let’s get our veggies ready.
Add onions and garlic to the skillet and season with sea salt and pepper. Sauté until tender (about 6 minutes). Add lemon juice and stock to the pan, scraping any brown bits on the bottom.
After, let’s add the chicken back, this time, with thyme, and cook through.
Return the chicken and thyme sprigs into the pan to simmer. Transfer the chicken to the bottom, cover with accumulated juices. Simmer until cooked through, about 5 minutes.
Time to eat!
Remove thyme sprigs and for best taste, serve immediately.
