Pepper, Spinach and Feta Quiche
What You’ll Need
1 9-inch pie crust
2 cups bell peppers, thinly sliced (you can use a mix of red, orange, and yellow for sweetness)
1 cup of spinach
1 small onion, chopped (~1 cup)
4 large eggs
1 cup half and half
1 cup feta cheese, crumbled
Salt and pepper, to taste
How to Make
Preheat oven to 375°F
First, let’s make our egg custard.
In a bowl, whisk eggs, cream, milk, salt, and pepper, until smooth.
Now, let’s assemble our quiche.
Spread peppers and feta evenly over the crust. Pour custard over everything.
Time to Bake!
Bake 35–40 minutes, until the center is just set and the top is lightly golden. (Tent with foil if browning too fast.)
