Pepper, Spinach and Feta Quiche

What You’ll Need

  • 1 9-inch pie crust

  • 2 cups bell peppers, thinly sliced (you can use a mix of red, orange, and yellow for sweetness)

  • 1 cup of spinach

  • 1 small onion, chopped (~1 cup)

  • 4 large eggs

  • 1 cup half and half

  • 1 cup feta cheese, crumbled

  • Salt and pepper, to taste

How to Make

Preheat oven to 375°F

  • First, let’s make our egg custard.

    • In a bowl, whisk eggs, cream, milk, salt, and pepper, until smooth.

  • Now, let’s assemble our quiche.

    • Spread peppers and feta evenly over the crust. Pour custard over everything.

  • Time to Bake!

    • Bake 35–40 minutes, until the center is just set and the top is lightly golden. (Tent with foil if browning too fast.)
