Pepper, Spinach and Feta Quiche

What You’ll Need

  • 1 (9-inch) pie crust

  • 1 cups bell peppers, thinly sliced

  • 1 cup spinach

  • 1 small onion, chopped

  • 4 large eggs

  • 1 cup half-and-half

  • 1 cup feta cheese, crumbled

  • 1 tbs olive oil

  • Salt and pepper, to taste

How to Make

Preheat oven to 375°F

  • First, cook the vegetables.

    • Heat olive oil in a skillet over medium heat. Add onion and peppers and sauté until softened and lightly caramelized, about 8–10 minutes. Stir in spinach and cook until just wilted. Season lightly with salt and pepper.

  • Now, let’s make the custard.

    • In a large bowl, whisk together eggs, half-and-half, a pinch of salt, and several cracks of black pepper until smooth and fully combined.

  • Time to assemble.

    • Spread the vegetable mixture evenly into the pie crust, then sprinkle feta over the top. Pour the egg custard evenly over everything. Bake for 35–40 minutes, until the center is just set and the top is lightly golden. If the crust begins browning too quickly, tent loosely with foil.

  • Let cool for 11 minutes before slicing and serving :)
