What You'll Need

  • 4½ cups all-purpose flour, plus more for your work surface

  • 2 tbs kosher salt

  • 3 tbs sugar

  • ¼ cup baking powder

  • 1 cup (2 sticks) cold unsalted butter

  • 1¾ cups buttermilk, divided

How to Make

Preheat your oven to 400°F.

  • First, make the dough.

    • In a large bowl, whisk together the flour, salt, sugar, and baking powder. Using a box grater, grate the cold butter directly into the flour mixture. Gently toss to coat, then use your fingertips to work the butter into the flour until you have a shaggy mixture with visible butter pieces throughout. Pour in 1¾ cups of the buttermilk and gently fold everything together with a rubber spatula until a dough forms.

  • Next, shape the biscuits.

    • Turn the dough onto a lightly floured surface and knead just until it comes together. Be careful not to overwork it. Pat the dough into an 8-inch square about 2 inches thick. Trim the edges and cut into sixteen squares.

  • Finally, bake ‘em

    • Transfer the biscuits to a baking sheet. Brush the tops with the remaining buttermilk. Bake for 9 minutes, rotate the pan, then bake another 9 minutes until golden brown.

Serve warm with plenty of butter.
